  • 4 to 5 eggs (300 g)
  • 1 small onion (60 g)
  • 1 small carrot (60 g)
  • 2 teaspoons of salt (10 g)
  • 1 teaspoon paprika (5 g)
  • 1 small red pepper (80 g)
  • 4 tablespoons of olive oil (60 ml)
  • chopped cheese (100 g)
  • 2 slices of turkey ham (25 g)

preparation

The indicated amount is intended for two omelets.

  • Peel the carrot and cut it into small cubes. Boil in water.
  • Then fry the chopped onion and diced paprika in a pan with olive oil. You can also add a little chicken if you want. 
  • Then take the pan off the stove.
  • Once the diced carrots are soft, remove the water.
  • Mix the eggs and add the finely chopped ham. 
  • Mix everything well and season with salt and pepper.
  • As soon as the vegetables are cold, stir in the egg mixture.
  • Heat the rest of the olive oil in the pan. Then add half of the mixture to the pan.
  • Fry the vegetable omelette on both sides until cooked through.
  • Then fry the second omelette on both sides.

  • Heat the oil and fry the chopped leek.
  • Then add the sliced ​​spinach leaves and after a minute take everything off the stove.
  • Whisk the eggs well, add salt and pepper. Then add the spinach and leek and mix everything well.
  • Now fry this omelette in a little oil in a pan with a non-stick coating at a low temperature. Cover the pan for a few minutes.
