Delicious rice with chicken and vegetables

Rice with chicken and vegetables  is healthy, perfect for every season, and easy to prepare. This dish is particularly popular in Spain and Latin America and is prepared in a wide variety of ways. Today’s recipe is perfect for 3 to 4 people.

Rice with Chicken and Vegetables: Ingredients

  • 2 tomatoes (80 g)
  • olive oil
  • 1 onion (60 g)
  • Salt and black pepper
  • 1 cup of rice (240 g)
  • 2 cloves of garlic (6 g)
  • 3 chicken breasts or thighs (300 g)
  • 1 cup of peas (150 g)
  • 5 saffron threads (1 g)
  • 1/2 green or red bell pepper (40 g)
  • 1 cube of chicken broth

  • First, heat some oil over medium heat in a fairly large pan.
  • In the meantime, dice the onion, pepper and garlic and add to the pan.
  • Roast everything lightly,  then add salt and pepper to taste and stir for 5 minutes.
  • Once the vegetables are tender, you can use a wooden spoon to chop them up.
  • Now the chicken breast into small cubes or strips cut and add to the vegetables. Turn up the heat, but not to the max. Boil, stir, for 5 minutes or until the chicken turns some color, but doesn’t cook through.
Fillet is good for rice with chicken
  • Peel the tomatoes, cut them to the size of the other vegetables and add to the chicken. Boil and stir for another 5 minutes.
  • In another pan, bring the water to the boil and then add the rice along with the cube of chicken stock.
  • Simmer for a few minutes, but don’t let the rice get too soft. Four or five minutes should be enough.
  • Drain the rice and add to the chicken and vegetables. Mix well.
  • Then add the saffron for color and flavor. If you don’t have saffron, you can also add turmeric as a coloring, although the taste won’t be quite the same.
  • Next add the peas along with the salt and pepper. The broth will be very flavorful at this point, but the rice will absorb it as it cooks. So don’t be too stingy with the salt.
  • Keep stirring until the rice and chicken are fully cooked. For more flavor, you can also add a little cooking water from the rice cooker and then let it boil until it has the desired consistency.
  • Take off the stove. Cover with a clean cloth and let rest for 5 minutes. This ensures that the rice gets a good taste and is al dente .
