Homemade vegan mayonnaise

It is believed that mayonnaise comes from the island of Menorca, more precisely from the city of Mahon. This is probably where its original name – Mahonesacomes from .

This emulsion is said to have originated around the 19th century. Since then, it has been regularly served as a flavor enhancement to various dishes.

An emulsion?

Homemade vegan mayonnaise is an emulsion

Yes, mayonnaise is an emulsion. An emulsion is a firmly distributed mixture of normally immiscible liquids. The ingredients are mixed drop by drop. This creates a stable mass.

Since mayonnaise is an emulsion, it is created by mixing oil in an aqueous liquid. This is due to the lecithin contained in the egg yolk.

The lecithin envelops the oil droplets, which are separated when whipped. In this way the oil can recombine. But how can you make homemade vegan mayonnaise without an egg?

Veganism and Mayonnaise

Homemade vegan mayonnaise without animal products

The philosophy of veganism is based on respect for animals. For this reason, vegans do not consume animal products. This includes meat, fish, seafood, milk, eggs, honey and all other products that are obtained from or by animals.

Therefore, vegans do not eat foods that contain these products. So you simply replace some ingredients with herbal substitutes.

  • 60 ml plant milk (preferably soy milk)
  • 120 ml of vegetable oil

preparation

  • Add the plant-based milk and lemon juice to your food processor.
  • Mix the ingredients together using the food processor.
  • Turn the food processor one step lower and add the oil bit by bit.
  • As soon as the mixture reaches the desired consistency, you can add the salt.
  • It’s best to keep the mayonnaise in a jar and consume it within three days.

This recipe is the basic recipe for vegan mayonnaise, of course you can also add other ingredients to be able to vary a little. For example, you could add garlic or coriander to it.

Using special oils is also an easy way to adapt the taste to the dishes. As you can see, mayonnaise is a delicious addition and the vegan variant is in no way inferior to it!
