  • 2 celery stalks
  • several broccoli florets
  • Parsley, bay leaf, paprika powder, salt and pepper to taste

preparation

  1. Wash, peel, and cut the vegetables into small cubes.
  2. Then put a little oil in a saucepan and briefly fry the cut vegetables with a little salt. Stir with a wooden spoon to prevent the vegetables from sticking to the bottom.
  3. Then take the pot off the stove and add the paprika powder. Stir well so the vegetables take on the flavor of this spice. The pot must not be on the stove at this moment, because the paprika burns quickly and becomes bitter.
  4. Then add the remaining spices and stir everything well.
  5. Then cover the vegetables with water and cook them on a low temperature until they are soft. Finally, you can add a little more salt to the delicious soup.

Note: If the soup is too watery and you prefer a slightly creamier texture, you can process some of the vegetables in the stand mixer and then add them to the soup.

ingredients

  • 1 onion (julienne)
  • 3 slices of pumpkin
  • 1 medium-sized, finely chopped tomato
  • 2 carrots
  • 12 green beans
  • 1 tablespoon of coriander seeds
  • 1 teaspoon of caraway seeds
  • 2 red chili peppers
  • 2 teaspoons of oil
  • a couple of curry leaves
  • 1/2 teaspoon mustard seeds
  • 1 tablespoon of tamarind paste
  • 1/4 cup coriander
  • 1 pinch of turmeric
  • Salt to taste

preparation

  1. Wash the vegetables, peel them if necessary, and cut them into small cubes.
  2. Fry the chopped chilli peppers in a little oil in the pan. Then add the coriander, turmeric and half of the caraway seeds. Fry everything briefly and then remove from the stove.
  3. Heat five cups of water in a saucepan and add the cut vegetables. Let it cook until the vegetables are tender. This creates a delicious broth.
  4. Once this vegetable soup is hot, take a spoonful of the broth and mix it with the tamarind paste.
  5. Then you add the mixture of turmeric, coriander, caraway seeds and the chili peppers to the soup (if you don’t want it too spicy, you can remove the chili peppers). Then stir the diluted tamarind paste into the vegetable soup.
  6. Now fry the mustard seeds briefly in a pan with the other half of the caraway seeds. Add the curry leaves and take everything off the stove as soon as they are crispy. You can now also add this spice mixture to the soup.
  7. Try the sambar soup and add salt to taste if necessary.

3. Vegetable soup with chickpeas

Vegetarian soups can be very versatile and nutritious. You can vary this recipe with chickpeas by using other legumes. You can also customize the vegetables. Use what you have at home right now.

  • 200 g chickpeas (soaked overnight or already cooked)
  • 2 carrots
  • 1 leek
  • 1 medium zucchini
  • extra virgin olive oil
  • Caraway seeds, salt and pepper to taste

  1. If the chickpeas aren’t cooked, it’s best to soak them overnight, then remove the water and cook them before adding the vegetables.
  2. Wash the vegetables well, peel them, and cut them into cubes. 
  3. Put a tablespoon of olive oil in a saucepan and fry the cut vegetables in it.
  4. As soon as it is golden brown,  cover it with water and add the cooked chickpeas. 
  5. Now season with caraway seeds, salt and pepper.
  6. Then let everything cook for a few minutes, uncovered, until the vegetables are soft.

  1. Wash the vegetables well, peel them and then cut them into cubes.
  2. Bring the water to a boil, then add the sliced ​​carrots and spring onions. Let everything cook for 10 minutes.
  3. Then add the diced potatoes and pasta.
  4. Briefly fry the cut tomatoes in a little oil and then also add to the soup.
  5. Now you can add the coriander if you like and season the soup with salt and pepper.
