If you melt the chocolate in a double boiler, make sure that no water drips into the chocolate, as this will immediately form lumps that you will not be able to dissolve.

Also, don’t melt the chocolate in the microwave, as it burns easily there.

Classic chocolate mousse

This classic recipe only needs two ingredients: eggs and chocolate. The mousse is also suitable for people with lactose intolerance. You can save the sugar for a bitter dessert or add it to taste. For 4 people with a sweet tooth you need:

  • 75g dark chocolate
  • 3 eggs

Melt the chocolate in a double boiler and set it aside. Separate the eggs and gradually stir the three egg yolks into the liquid chocolate until a smooth, homogeneous mass is formed. See if it tastes sweet enough. If not, sweeten it with powdered sugar.

Then beat the three egg whites until stiff and fold the egg whites into the chocolate mass. Pour the cream into bowls or a bowl and put it in the refrigerator for at least 4 hours or overnight.

This recipe is right for those who like it less tart, prefer sweet dishes and creamy flavors. For 6 people you need:

  • 175g dark chocolate
  • 3 eggs
  • 250ml cream

Melt the chocolate in a double boiler until it is smooth. Separate the eggs and gradually stir the egg yolks carefully into the melted chocolate.

Whip the egg whites and cream separately from each other very stiffly and carefully fold both into the chocolate custard. Fill into bowls or a bowl and let set in the refrigerator overnight.

Vegan chocolate mousse without egg and without cream

Those who follow a purely plant-based diet do not have to do without the delicious dessert. Even if you are not on a vegan diet, you should try this recipe and notice how delicious vegan cuisine can be! For 4 vegan sweet tooth you need:

  • 200g dark chocolate
  • 400g silken tofu
  • 1 tbsp vanilla sugar

Melt the chocolate in a double boiler. Puree the silken tofu (please do not use any other type of tofu!) In a blender or food processor to a cream. Stir the vanilla sugar into the silken tofu puree.

Then gradually stir the tofu mousse carefully into the melted chocolate and put the vegan chocolate mousse in the refrigerator for at least 4 hours to cool it through and through.

These three recipes are basic variants that you can refine depending on the season and mood by mixing the following ingredients into the cream in the last step:

  • cinnamon
  • ginger bread spice
  • Grated orange peel
  • rum
  • Instant coffee powder
  • White chocolate instead of dark chocolate
  • pink pepper
  • Peppermint oil or fresh peppermint leaves
  • Raspberries

    To serve, you can cut out cams and decorate with vanilla sauce or whipped cream. A fruit sauce made from forest fruits or tart cranberry jelly also goes well with it. You can also decorate with orange peel zest or grate white chocolate over it.
