The Neapolitan flan is characterized by its frothy, airy texture. It therefore melts in the mouth and invites us to eat more of it. The preparation is much easier than you think. You will see that in a short time you can conjure up a wonderful dessert on the table to surprise your family.

The main ingredients are milk and egg. We use skimmed milk because the dessert should be low in calories. Although this is rich in calcium and iodine and also preserves the milk sugar, it loses vitamins A and D through skimming. If you do not want to do without it, you can use whole milk.

Chicken eggs are very nutritious  and are particularly rich in high quality protein and monounsaturated fatty acids. It also contains vitamins A, B (B2, 3, 12 and folate), as well as phosphorus, iodine and selenium.

You also need ricotta (instead of condensed milk) and stevia (instead of sugar) for the Naplitan flan, which, however, provide relatively few calories compared to the traditional ingredients. This dessert is therefore also suitable for diabetics. If you wish, you can of course also use sugar instead of stevia.

Ingredients for 10 people

  • 2 1/2 Cups of skimmed milk
  • 1 1/4 Cups of ricotta
  • 5 eggs
  • 1 tablespoon of powdered stevia
  • 2 tablespoons of vanilla extract
  • the necessary amount of vegetable oil (as a spray)

Ingredients for the caramel

  • 50 g sucralose in powder form
  • 3 tablespoons of water
  • a squeeze of lemon juice

  1. Preheat the oven to 200ºC.
  2. Then mix the skimmed milk, cheese and stevia well with the mixer.
  3. Then make the caramel: place a saucepan with the sucralose on the stove and heat it over low. Always stir well until the sucralose takes on a darker shade. Then turn off the stove, add the water and lemon juice, stirring constantly.
  4. Spray the flan molds with vegetable oil.
  5. Then put the caramel on the bottom and then the prepared mass.
  6. Cover the molds with aluminum paper and heat them in a double boiler in the oven. Place the flan molds in an ovenproof bowl of water that covers 1/3 of the molds.
  7. Then leave the flan in the oven for about an hour at 180ºC. Make sure there is always enough water in the bowl. You can top up with water at any time.
  8. Then do the chopsticks test: If you stick a wooden stick into the flan and it is clean after pulling it out, the delicious dessert is ready. Let it cool, then remove it from the mold.

More options

  • You can also use  almond milk instead of skimmed milk, the required amount is the same.
  • Decorate the flan with fruits: strawberries, cherries, wild berries … choose your favorite fruit!
  • If you like “Dulce de Leche” you can add some of it to the flan.
  • You can also replace the ricotta with sweetened condensed milk. But don’t forget that the dessert will then have more calories.
